Chicken and Apple Breakfast Sausage

I make up a batch of these tasty sausage patties on a regular basis for our breakfasts. We all love eating them, and it’s much healthier to make your own than to buy commercial sausage where you really can’t be sure exactly what you’re eating 🙂  Not to mention it’s more economical to make your own.

Although I make these with ground chicken, I’m sure they’d also be good using ground pork or turkey. In both cases, I would recommed only using meat from humanely raised animals. Another variation is to leave out the apple. The apple lends a lot of sweetness to this sausage, but sometimes I feel like a more savory sausage in which case I simply leave out the apple. Both versions are tasty so I tend to alternate between the two.

Chicken and Apple Breakfast Sausage

1 lb ground chicken
1 apple, peeled and grated
½ teaspoon dried basil
½ teaspoon dried thyme
½ teaspoon dried sage
½ teaspoon ground cumin
¼ teaspoon dried oregano
¼ teaspoon dried marjoram
1 teaspoon sea salt
Scant ¼ teaspoon black pepper
1 egg

1. Preheat oven to 350F
2. Add all ingredients into large bowl and mix well (or use a food processor)
3. Form mixture into patties on a parchment-lined baking sheet.

4. Bake for 10 minutes each side.
5. Makes 18.

Note: You could also cook these in a skillet, but I find baking them to be quicker and easier. As you can see from the top photo, I was also getting some browning in the oven. However the last time I made these I didn’t get much browning at all (not sure why). So if you like them reliably brown with that crispy outer, cook them in the skillet. Otherwise throw them in the oven!
