This recipe caught my eye in the October 2010 edition of Vegetarian Times magazine. Can you believe that tonight was the very first time that I made it?! I forgot about it for a long while, then I became extremely focused on soups for a long while 🙂
So even though you’d probably consider this more of a Fall recipe (when apples and cranberries are in season) it seemed fitting to open Summer Salad Sundays with this recipe as it finally gave me the impetus to make it. And I’m glad I did! This is a really tasty salad, a definite keeper and sure to be a crowd-pleaser.
My recipe below is fairly true to the original, although I doubled the garlic, and used more apple and more olive oil than the original recipe. I also served the salad on a bed of lettuce instead of spinach because we try to avoid raw spinach due to its high oxalate content.
Tangy Carrot-Apple Salad
1 1/2 tablespoons raw apple cider vinegar
2 small cloves garlic, minced
2 cups grated carrots
3/4 red apple, diced
1/4 cup sliced green onions
1/4 cup chopped fresh parsley
1/4 cup chopped dried cranberries
1 teaspoon honey
1 1/2 tablespoons extra virgin olive oil (this one is my favorite)
Loosely chopped lettuce of your choice
1. Combine the cider vinegar and garlic in a small bowl. Let stand for 15 minutes.
2. Mix together the carrots, apple, green onions, parsley, and cranberries in a large bowl.
3. Whisk the honey and olive oil into the cider vinegar mixture to make the vinaigrette.
4. Pour the vinaigrette over the carrot mixture and toss to coat.
5. Season with salt and pepper if desired.
6. Serve on bed of chopped lettuce.
The original recipe recommends making the salad at least 2 hours ahead. I didn’t do this and it was still really tasty! But making it ahead would give more time for the flavors to blend. To make ahead, follow steps 1-5, then add the salad to the lettuce when you are ready to serve.
