It’s tomato time! Tomatoes are everywhere right now, at our local Farmers Market and in our garden. I hardly buy fresh tomatoes throughout the year because store-bought ones are so tasteless, and not exactly fresh anyway. But now is the time to enjoy the amazing flavors of real, sun-ripened, juicy tomatoes!
This is a great side to have with meat or seafood dishes. I especially like to pair it with my breaded fish recipe. It would also be great as a taco topping, or with some corn chips as a snack.
Avocado and Tomato Salsa
2 medium tomatoes, diced
1-2 tablespoons red onion, finely chopped
2-3 scallions, finely chopped
¼ cup (approx.) finely chopped fresh cilantro
½ ripe but firm avocado, diced into small cubes
½ lemon/lime, juiced
1 clove garlic, minced
Pinch cayenne pepper
Mix all ingredients together in a bowl. Adjust salt and cayenne pepper to taste.
This salsa is even better if made ahead of time, giving the flavors a chance to meld.
