Liver Snacks

Ok, so I’m the first to admit that this isn’t the most appetizing food photo you will ever see, but it tastes good. Really good! And it’s a really simple way to eat liver. I prepare it this way to snack on when I want a pick-me-up, because (and I’m not kidding), about half an hour or so after snacking on liver, I suddenly feel a whole lot more energetic!

1/2 pound liver (I prefer to use lamb or calf liver because both have a milder taste than beef liver)
1 tablespoon butter or lard
Sea salt
Pepper

1. Slice the liver into thin strips (easier to do when its partially frozen)
2. Heat butter or lard in a pan to medium-high.
3. Add liver, sprinkle generously with sea salt and a little pepper and sear each side for 2-3 minutes.

Let it cool a bit, then munch away! You don’t have to eat it all in one go, just put the rest in the fridge for later.

    I concur – eating organ meats makes me feel like Popeye! I had Charcuterie platters for 4 days in a row last time I was in Charleston SC and never felt better!

    my husband wants to try liver jerky what do you think? We use to make our own jerky all the time back in the states BUT since moving back to OZ we really havent done so but ive been cooking and talking alot about liver and he asked about turning it into jerky.

      I’ve never thought of doing that! We used to make our own jerky too a few years ago….well my husband did, but I’m not sure why he stopped doing it. What I think might work would be to make a blended meat and liver jerky. I think if it was just liver it might get too dry, but the meat would add a bit of fat which should help keep it chewy and not dry.
